Kyusung Choi was the chef pâtissier in charge of Café in Space located in Jongno, Seoul. He went to France to learn baking in 2004 and back to 2015. During this period, he experienced diverse style of baking through working in bakery, restaurant, and hotel. When he worked at the Hotel Royal Monceau, he was part of Pieere Herme team member. Based on this experience, he got the title of ‘Pieere Herme chef’ as the first Asian and he opened Café DIOR of Christian DIOR and worked as Chief Operating Officer in Chengdam-dong, Seoul. He thought that natural flavor is the most important things and expressed deserts by his own style. Also, he is the best pâtissier in Korea who made modernity with Korean ingredients based on classic French.
